Sourdough Pancakes

Night before:
  Mix 1 C sourdough starter with 1 C hot water and 1 C flour with a rubber scraper.  Cover with a towel and let it sit over night.
Next Morning:
 Mix starter.  Take out 1 C of the starter and store it for the next sourdough batch.  Add the following ingredients to the starter, mixing after adding each one.
 1 egg
 1 1/2 t sugar
 1 t salt
 1 t baking soda
 2 T oil.
Heat the griddle to 375 degrees.  Flip when they're ready.  Enjoy!
The Loftus family has a lot of history in Alaska.  From gold mining and finding Wooley Mammoth bones to building the pipeline to vacations to visit Grandma Gladys, almost anyone who is a Loftus has been to Alaska.  One big Alaskan tradition is sourdough pancakes.  The starter used to make them has been in the family for many years.  It was first made in 1898 in Point Hope Alaska by Jo Richards, a gold prospecter and friend of the Loftus family.   and every Sunday morning, Dad gets up to make this special treat.  Dad also keeps the tradition alive by throwing out the first pancake of each batch, just as the men in Alaska gave the first pancake to the head sled dog.
